Darker roast coffees are the bitter ones, medium roast brings the most caffeine from the bean, African coffees taste fruity/earthy (to generalise), Island coffees (bauxite lands) produce the tastiest coffee and Central American not far behind at a cheaper price.
I used to use a local roaster until my bag of Honduran tasted African so use a place in Guildford called 'Redber' https://www.redber.co.uk/ simply because they stock the Honduran beans. Most towns will have coffee roaster these days, they buy green bens and roast to suit as green beans don't lose flavour for a couple of years but once roasted only stay fresh for a fortnight.
Single origin coffee > blended coffee, unless you like the specific blend.
